How Long to Rest a Brisket
Why Resting Matters
We know it’s tempting to slice into that brisket right off the grill, but don’t skip the rest! Resting helps the juices redistribute, giving you moist, tender slices instead of dry, chewy meat.
When & How to Rest
Once your brisket hits about 203°F, pull it off the heat. Let it rest for at least 1 hour, but 2–3 hours is ideal. Just be sure the meat stays above 140°F to avoid the “danger zone” where bacteria can grow. After resting, it’s time to slice or refrigerate leftovers.
Resting Methods
1. Countertop
Leave it wrapped in foil or butcher paper on the counter for about an hour. Quick and easy, but not the best for keeping it juicy long-term.
2. Blanket or Swaddle

3. Faux Cambro
Wrap your brisket in towels and place it in a cooler (no ice). This DIY method helps maintain temperature for up to 3 hours—perfect for backyard BBQ.
